Fish fillet in creamy cocunut sauce

I love cooking with cocunut milk, this is one of those recipes you can easely adapt to your personal taste by adding lobster, shrimps, mussels, scallops and more or substituting it for chicken breast.

Here i use tilapia fish just because i happen to have some at home but feel free to use whatever kind of fish you like.

4 tilapia fish fillets
1 can cocunut milk
1 tablespoon garlic paste
1 onion diced
1 red bell pepper diced
1 green bell pepper diced
1 lime juiced
Cilantro chopped
2 tablespoon tomato paste
1 tablespoon olive oil
Sal, pepper and oregano to taste

(Serve with white rice)

Add some salt, pepper and lime juice to your fish.

Sautee onion, garlic, bell pepper and cilantro in olive oil until soften, add salt, pepper and oregano.
Add tomato paste, cocunut milk and water, let it simmer a little bit then place the fish fillets and reduce the heat.
Let it sismmer until fish is completely cooked.

Taste the sauce and add more lime juice if need it.

Serve with white rice and enjoy!
