Dominican cornmeal cake/Arepa dulce dominicana

I love this recipe so much that i always end up preparing it when i crave for something sweet yet satisfying.
My mom makes it and i learn the tecnique to the right consistencie from her.
The best way to eat this delicious treat is with a cup of hot chocolate or just a cup of milk!
Arepa is a famous dominican cake it can also be prepared as a savory dish and you can find it everywhere in the country but specially in Jarabacoa where the their residents sale it at the streets.

Here the ingredients;

2 cups sugar
3 cups all purpose flour
3 cups fine yellow cornmeal
2 cinnamon sticks
1 teaspoon vanilla extract
1 teaspoon salt
2 sticks of butter
1/4 teaspoon ground clove
1/4 teaspoon ground cinnamon
1 cup raisins (just because i love to add lots of raisins)
2 cans coconut milk
5 cups whole milk
2 cans evaporated milk

Prehead your oven to 350º degrees.
In a large pot combine all the ingredients. With a wooden spoon stir well to make sure the sugar as well as the cornmeal and flour are completely dissolved and all of the ingredients are well incorporated. Then put it on medium high heat.
Stiring constantly to avoid clumps as it gets thicker, stir more frequently so that it doesn’t stick to the bottom, it should look like a pudding.
When the batter has thicken remove the cinnamon sticks and add the raisins then transfer to the greased baking dish.
I always like to add some butter on top so that it creates a nice golden crust.
Remove the cinnamon sticks before baking.
Take it to the oven and bake for 45 mins to 1 hour. Place a knife in the center if it comes out clean the arepa is ready.
Let it cool before serving it, i personally like to eat it while is still warm.

Guacamole

Para un delicioso, rápido y saludable aperitivo tenemos éste guacamole.
Saca de apuros a cualquiera y sólo necesitamos unos chips para acompañar y listo.
A mi me encanta prepararlo cuando hago tacos o cualquier otro plato mexicano.

Aquí les comparto mi receta.

5 aguacates hass maduros
1/4 taza de cebolla blanca picadita
El jugo de 1 limón
1/2 taza de tomates picadito
Sal, pimienta al gusto

Corta los aguacates por la mitad, retira la pulpa y colocala en un recipiente. Aplastalos con un tenedor  y añade el resto de los ingredientes.
Sirve a temperatura ambiente con chips o como topping de tus tacos o quesadillas.

Si lo quieres picante, agrega chiles jalapeños en conserva picaditos o unas gotas de salsa tabasco.
