Basil, feta and cherry tomatoes stuffed salmon.

This is one of those recipes that can either ruin your night or make it shine.
I have this beautiful skinless salmon fillet and was wondering what should i do to make it different, "cause i was getting bored of the same salmon recipe over and over" so i desired to stuff it.

Grabed some mushrooms i had in my fridge, cherry tomatoes, some feta cheese, garlic, basil and wonderfulness happened!

Below the recipe!

1 piece of salmon fillet
1 cup cherry tomatoes halved
1 garlic clove chopped
1 small onion chopped
1/4 teaspoon dry basil
2 tablespoons parsley chopped
1/2 bell pepper chopped
Olive oil
1/4 teaspoon dry oregano
1/2 cup feta cheese crumbled
Salt and pepper to taste

Butterfly your salmon and set aside.

Put a pan in medium high, add olive oil, garlic and onion; cook until soften. Incorpore tomatoes, bell pepper, dry basil, dry oregano and parsley. Add salt and pepper and finish with the feta cheese.

Place your butterflied salmon in an oven safe pirex and stuff it with the mixture. Add olive oil on top of the salmon and place it in the oven at 400° for 10 minutes.

Serve while is still hot and enjoy it.
